I love cooking all of my pasta and sauce dishes in this cast iron skillet, it makes it so easy!
1 teaspoon of minced garlic
Olive oil to taste
1/2 cup of white or red wine, your choice
2 tablespoons of tomato paste
1 handful of fresh spinach
Shaved Parmesan cheese
1/2 cup of minced onions
1/4 cup of cherry tomatoes cut in half
1 packet of angel hair pasta
Salt & Pepper to taste

In a pan, add your garlic, onion and olive oil and saute. Add your tomato paste, salt & pepper, mix. Slowly add your wine, I add enough to make it not so thick but not so liquid either. In this dish as it cooks, adding more wine to keep it from getting too dry or thick is the way to go, so keep an eye on it! Cook on low for 10 minutes, start boiling your angel hair to cook to al dente. Add your Parmesan and spinach to the sauce. Once spinach is fairly wilted put on low, drain your noodles, slowly add to your sauce, top with more olive oil and slowly fold. Serve and garnish with some fresh Parmesan! Enjoy!
