Who’s on the search for easy tasty recipe for the family?! Or perfect for two? Meee! I’m sharing a family recipe that I’ve always loved to eat growing up and still do! It’s so easy, affordable and tasty to make! It’s my families Chicken Pimento Sandwiches!
Ingredients:
Two Chicken Breasts
¼ cup Chopped Pimento ( canned )
½ cup Mayonnaise
2 packs of Hawaiian bread rolls
tsp. Salt & pepper
tsp. Garlic Powder
tsp. Onion Powder
tbsp. Olive Oil
1/2 stick of melted butter
Place your chicken in water to boil along with olive oil, garlic & onion powder, salt and pepper for 50 minutes on a low medium boil. Don’t boil your chicken too high and fast, this will cause the chicken to be chewy. You will know when the chicken is ready when it falls apart easily. Save a ½ cup of the water that you used to boil with and set aside.
Remove the chicken from water and let it cool down at room temp. Start shredding the chicken with two forks. Preheat oven to 350.
Place shredded chicken in a large mixing bowl, add your mayo and pimento. Add a little bit of your saved liquid ( about 1 tablespoon ) Scoop your chicken mix into each roll ( about one spoonful ) place on baking sheet and then spread your melted butter over the rolls with a basting brush. Cook for 5 minutes to warm up and make a tad crispy!
Serve right away, I bet you won’t have just one!
