Pasta Salad with Arugula and Lemon Dressing

Equipment

  • 1 Large Bowl
  • 1 Measuring Cup

Ingredients:

  • 3 cups Bowtie or "Farfalle" Pasta You can get gluten free too!
  • 1/2 cup Grated Parmesan
  • 7 tbsp. Olive Oil
  • 2 tbsp. Honey
  • 2 cups Arugula I grab one hand scoop twice
  • 1/2 cup Walnuts chopped
  • 1 Lemon ( juice and zest )
  • 1/2 tsp. Salt & Pepper
  • 1 tbsp. Balsamic Vinegar
  • 2 tsp. Dijon Mustard

Instructions:

  • Start by cooking your pasta according to the package directions - just a touch past al dente so it holds the dressing nicely. Once it’s done, drain and give it a good rinse to cool things down.
  • In a big mixing bowl, whisk together fresh lemon juice and zest, balsamic vinegar, Dijon mustard, chopped walnuts, salt, pepper and olive oil. Stir in the grated Parmesan to bring it all together.
  • Toss in the cooled pasta and mix it well so everything gets coated in that bright, zesty goodness. Finally, fold in the arugula. So simple, so fresh, and so good. Serve right away or cool in fridge until you're ready!

Notes:

This dish can be made ahead and stored in the fridge for up to 2 days. I like to serve it fresh, it's best closer to room temp as the dressing is more loose. If you decide to store in fridge, take it out for about 15-20 min prior to serving and give it a mix!
