If there’s one dish I’ll be making on repeat this Summer season, it’s this delicious pasta salad featuring arugula and a lemon dressing recipe! It’s zingy, sweet and simple to throw together, and feels like a little burst of sunshine on your plate. Whether you’re meal prepping for the week or bringing a side to your next backyard BBQ, this one’s a crowd-pleaser.

What Pairs Well With It?

This pasta salad including arugula is super versatile! Pair it with grilled chicken, shrimp skewers, or even a simple veggie burger. I’ve even served it next to my favorite cheese board for an easy lunch spread with friends – so good. A chilled glass of white wine or sparkling lemonade? Don’t mind if I do.

Should You Overcook Pasta for Pasta Salad?

Nope! Al dente is the way to go. Overcooked pasta can get mushy, and nobody wants that. Keep it firm with a little bite – especially in a pasta salad with arugula, it’ll hold up better with the lemony dressing.

I love the peppery bite of arugula paired with the zesty lemon dressing – it just feels like sunshine in a bowl.

Equipment

  • 1 Large Bowl
  • 1 Measuring Cup

Ingredients:

  • 3 cups Bowtie or "Farfalle" Pasta You can get gluten free too!
  • 1/2 cup Grated Parmesan
  • 7 tbsp. Olive Oil
  • 2 tbsp. Honey
  • 2 cups Arugula I grab one hand scoop twice
  • 1/2 cup Walnuts chopped
  • 1 Lemon ( juice and zest )
  • 1/2 tsp. Salt & Pepper
  • 1 tbsp. Balsamic Vinegar
  • 2 tsp. Dijon Mustard

Instructions:

  • Start by cooking your pasta according to the package directions – just a touch past al dente so it holds the dressing nicely. Once it’s done, drain and give it a good rinse to cool things down.
  • In a big mixing bowl, whisk together fresh lemon juice and zest, balsamic vinegar, Dijon mustard, chopped walnuts, salt, pepper and olive oil. Stir in the grated Parmesan to bring it all together.
  • Toss in the cooled pasta and mix it well so everything gets coated in that bright, zesty goodness. Finally, fold in the arugula. So simple, so fresh, and so good. Serve right away or cool in fridge until you're ready!

Notes:

This dish can be made ahead and stored in the fridge for up to 2 days. I like to serve it fresh, it’s best closer to room temp as the dressing is more loose. If you decide to store in fridge, take it out for about 15-20 min prior to serving and give it a mix!

Does Arugula Taste Good in Pasta?

Yes! Arugula adds a peppery, slightly bitter note that really balances out the brightness of the lemon and the richness of the olive oil. It’s basically the grown-up green that gives your pasta a little attitude (in the best way).

What Compliments Arugula?

Lemon, parmesan, cherry tomatoes, avocado, olives, pine nuts – so many good things! This pasta salad allows arugula to shine but also plays nicely with all your favorite add-ins. Don’t be afraid to get creative and toss in whatever’s hanging out in your fridge!

How to Make Pasta Salad More Flavorful?

Use fresh lemon juice, a good quality olive oil, and don’t skip the salt. Also, letting the salad sit for a bit before serving helps all the flavors meld together beautifully. A sprinkle of crumbled feta or shaved Parmesan on top of your arugula pasta salad? Yes, please.
