What You’ll Need To Make Taco Cups

These Charcuterie Cup Taco Bites are sure to be a crowd-pleaser! With their fun presentation, they’re a great addition to any appetizer platter. Here’s what you’ll need to get started:

The Instructions

First, start boiling your water to cook your corn and set aside when finished so they can sit at room temp to cool down. Next, you will want to make the crema for the street corn. Take 1 spoon of mayo, 2 spoonfuls of sour cream, squeeze 1 lime, add to your taste the chili pepper, mix, cover and place in fridge until ready to garnish the street corn cobs.

Slice your red and yellow peppers, place in fridge in a sandwich bag for now. Grab your box of taquitos and jalapeno poppers and cook in oven as instructions read. Once done, set aside.

Grab your corn on the cobs and pierce each center with the cocktail pick, place on a larger platter and when you’re done, layer the cobs with the crema you made, covering the corn as much as possible, you can turn them over until fully covered. Then crumble your contija cheese over along with your chopped cilantro. Set aside.

Grab your empty charcuterie cups, place your shredded lettuce on the bottom of each cup as a base. Add 1 street corn cob, 1 taquito, 1 popper ( pierced with a cocktail pick ) and place your red & yellow pepper in front. Garnish with a slice of lime! And you’re done!

You can serve these right away at room temp! I like to make these last before my guests come so they stay as fresh as possible, since already cooked room temp/warm works well with serving these fresh! Enjoy!
