Gluten Free Coconut Funfetti Cake Recipe

EASY GLUTEN FREE COCONUT CAKE

Can I share a secret with you? Shhhh, I love cake but I don’t eat it that much because well, I always feel guilty because of the white flour most cakes are made with. So, I was excited to see a gluten free cake mix available! Not only that, I’m sharing a delicious easy to make frosting for your cake! This cake is perfect for birthdays, cupcakes, any celebration or just because!

LET’S MAKE IT

The cake mix is super easy, you can find the Pillsbury Gluten Free Funfetti mix at your local super market. When making the cake mix, just follow directions. Note, I made it with 4 egg whites for less fat + the cake mix is more of a white color.

I added “Jet-Puffed” to the cake once it’s finished and cooled down. I cut the cake carefully in half and spread the marshmallow creme in the center then placed it back together and put aside, now lets make the frosting!


HOMEMADE COCONUT FROSTING

Those sugary filled icing packs that come with these cakes are loaded with bad things so I wanted to share an alternative and equally sweet + delicious recipe for your cake! This coconut oil frosting is delicious!

what you will need:

  • unrefined (virgin) coconut oil
  • 2-3 cups of powdered sugar
  • 2-3 tablespoons of coconut milk
  • 2 teaspoons of vanilla extract
  • coconut shavings ( garnish )
  1. In a mixing bowl, make sure the coconut oil is broken up until it’s nice and smooth
  2. Get your electric hand whisker out and start with adding 1 cup of the powdered sugar, the vanilla and 2 tablespoons of coconut milk
  3. Mix together until smooth!
  4. Keep adding powdered sugar along with the tablespoons of coconut milk as needed until everything is combined – You will find that the more you whisk the frosting it will grow and become more “whipped look”. Reference the photo below for how it should look like! Just keep an eye on the frosting, you don’t want it to too “liquidy” so add more powdered sugar if your consistency is too watery looking.
  5. Add your frosting to your cooled down cake, this frosting melts easily so once you garnish with coconut shavings ( optional ) place in the refrigerator until ready to serve chilled!
