There's nothing like a simple, fresh salad to elevate any meal or stand out as the star of a light lunch. My Greek Cucumber Tomato Feta Salad is the perfect combo of crisp cucumbers, juicy tomatoes, and feta. It's quick to make, full of vibrant flavors, and works as a refreshing side dish or a healthy snack on its own.
In small mixing bowl, place your tomatoes and add your balsamic glaze, olive oil, salt & pepper, garlic powder and mix. Place in the refrigerator to chill.
Cut your cucumber in half and gut the seeds out. Cut the cucumber in small cubes and place in a large mixing bowl. Next, add your diced basil, Mango, Feta and tomato mixture and lightly fold. Serve right away or chill for 1 hour before serving. This is paired delicious with a Sandwich or protein, enjoy it as a healthy snack, appetizer or side dish!
Notes:
If you don't like mangoes, you can also use peaches!
