Greek Cucumber Tomato Feta Salad

My Greek Cucumber Tomato Feta Salad is the perfect combo of crisp cucumbers, juicy tomatoes, and feta. It's quick to make, full of vibrant flavors, and works as a refreshing side dish or a healthy snack on its own.

Equipment

  • Mixing Bowl

Ingredients:

  • 1/2 1 pint box Angel Sweet Tomatoes Cut in half
  • 2 tbsp. Olive Oil
  • 1/2 tsp. Garlic Powder
  • 1/2 8 oz. Feta Cheese
  • 3 sprigs Fresh Basil
  • 1/2 Lemon
  • 1 Fresh Mango Cut in small cubes
  • 1 Cucumber Cut in small cubes
  • 1 Salt & Pepper to taste
  • 1 tbsp. Balsamic Glaze

Instructions:

  • In small mixing bowl, place your tomatoes and add your balsamic glaze, olive oil, salt & pepper, garlic powder and mix. Place in the refrigerator to chill.
  • Cut your cucumber in half and gut the seeds out. Cut the cucumber in small cubes and place in a large mixing bowl. Next, add your diced basil, Mango, Feta and tomato mixture and lightly fold. Serve right away or chill for 1 hour before serving. This is paired delicious with a Sandwich or protein, enjoy it as a healthy snack, appetizer or side dish!

Notes:

If you don't like mangoes, you can also use peaches!
