Romaine Lettuce Salad with Parmesan Vinaigrette, Tomatoes & Mozzarella

This fresh and easy Romaine Lettuce Salad is tossed with juicy cherry tomatoes, creamy mozzarella, and a zesty homemade Parmesan vinaigrette. It’s light, flavorful, and perfect for any meal or gathering!

Equipment

  • 1 Glass Bowl

Ingredients:

  • 2 heads Romaine lettuce, chopped or separated
  • 1 cup Cherry tomatoes, halved
  • 1 cup Mozzarella pearls (or diced fresh mozzarella)
  • 1/2 cup Shaved Parmesan cheese
  • 1 Fresh cracked black pepper & salt (to taste)

For the Parmesan Vinaigrette:

  • 1/3 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 cup Grated Parmesan
  • 1 clove Garlic, minced
  • 1 Salt & pepper to taste

Instructions:

  • Make the dressing: In a small jar or bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, grated Parmesan, salt, and pepper until smooth. Set aside.
  • Assemble the salad: In a large bowl, combine romaine, cherry tomatoes, and mozzarella.
  • Dress it up: Pour the vinaigrette over the salad and toss gently to coat.
  • Finish with flair: Top with shaved Parmesan and cracked black pepper.

Notes:

This salad is even better with grilled chicken or crusty bread on the side!
