Kale Parmesan Lemon Salad with Raisins
I had this delicious salad at a local spot I love and I knew I had to re-create it! I love a good, fresh, and tasty Kale Parmesan Salad! Check out this delicious recipe!
Prep Time 10 minutes mins
- 1 12 oz. bag GreenWise Organic Kale ( any brand works )
- 1 pinch Salt & Pepper to taste
- 1/2 cup Pistachios
- 1/2 cup Grated Parmesan cheese
- 1 tbsp. Lemon Juice
- 2 tbsp. Golden Raisins
Dressing
- 1/4 cup Olive Oil
- 3 juiced Lemon
- 2 tbsp. Honey
- 1/2 tsp. Salt & Pepper
Make sure to clean your kale well, and massage the kale so that it's easier to eat and digest. Once cleaned, place back into the fridge to get chilled again for about 15 minutes, I love this salad to be cold and crisp. Now start your prep for your dressing.
In a bowl, mix all of your dressing ingredients together and place aside.
Grab your bowl of kale and slowly mix in the dressing well. Place back into the fridge to keep chill or serve right away. Garnish with shredded Parm to top off!
Add some sliced almonds for a little crunch!
