I’ve got a delicious recipe to share with you today! It’s easy to make, and oh so perfect for dessert, breakfast or just because, I’m a huge fan of anything maple so I figured I’d share a muffin recipe that has a twist of seasonal flavor! Let’s make it!
INGREDIENTS:
1/3 cup melted coconut oil
1/2 cup maple syrup
2 eggs
1 cup packed mashed ripe bananas (about 4 bananas)
1/4 cup milk
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon of cinnamon
1/2 teaspoon salt
1 3/4 cups whole wheat flour
1/3 cup old-fashioned oats, plus more for sprinkling on top
1/2 cup chocolate chip morsels
INSTRUCTIONS:
First, preheat your oven to 325 degrees and grease a 12-cup muffin tin well with butter or cooking spray. Whichever you prefer!
In a small bowl add the coconut oil and maple syrup and mix well. Add the eggs and mix to combine. Add the mashed banana, milk, and vanilla and stir to combine. Add the soda, salt, cinnamon, whole wheat flour, and oats. Stir until the mixture just comes together! Add the chocolate chips and stir!
Place your mix into each muffin cup, sprinkle the tops with a few chocolate chips and some raw oats if you’d like! Bake for 23-25 minutes or until you use a toothpick to see when they’re ready!
Let the muffins cool in the pan. And enjoy!
